Note from Tony Dean: Chef Mark Mancuso says he first tried this recipe while on a cruise to Nassau. They used redfish but Mark says it’s even better with walleye.
INGREDIENTS
1 walleye fillet Old Bay seafood seasoning 1 cup thinly sliced onion, red, green and yellow peppers plus celery. 2 oz white wine 1 tbsp butter 1 cup cooked rice I tsp Zest (lemon or lime)
PREPARATION (Do this outdoors)
Pat the fish dry, then coat liberally with Old Bay seasoning. Heat cast iron pan until it is very hot, almost gray. Cook 3 minutes, turn and cook another minute, then reduce the heat and add a small amount of olive oil, vegetables and cook about two minutes or until done to your liking.
Just before serving, add the white wine, the lemon or lime zest (grate the peel of either, then stir and serve on the bed of rice. Garnish with lemon.
